There is no shortage of beauty on the landscape of Guatemala, and Lake Ayarza is no exception. Formed by a volcanic eruption 20,000 years ago, Lake Ayarza rests 1400 meters above sea level. The high altitude ensures coffee grown in this region reaches peak ripeness; a crucial act of patience when producing natural coffees. Exclusively grown by small producers, this this coffee is brought to the remote mill for processing—some by truck, others by donkey (!!!)
Here at Six Shooter, we have a soft spot for natural coffees. We love the sugars which develop from the coffee cherry drying around the seed (what we know as the coffee bean, once it is roasted). The Guatemala Blue Ayarza lives up to the hype. We cannot get enough of the ripe tropical fruit notes in this coffee, and are delighted by the spicy finish of clove and bergamot. While all those flavors can often present as punchy, this coffee is not. It is delicate, sweet, and balanced. Blue Ayarza is perfect for those trying to dip their toes into specialty coffee, or those with a seasoned palate eager to try something new and refreshing.
